Author's Response: Good question. Here's what I imagine:
Hedwig took a while to recover on her own, but eventually made her way back to Hogwarts and Harry. Let us imagine that she showed up one day at breakfast, and Snape was the first person Harry turned to with a large smile as she nipped a kipper off of his plate.
